Can’t say i’ve ever paid much attention to the background but having peaked my curiosity, I just fired up and mine show the garage in the background… i’m on the same as you, series S.
Maybe restart the XB and see if it goes back to normal.

If memory serves me right, this change also happened when you select advanced painting if it’s not available. It was with the update of Hot Wheels expansion last summer.
it happens to me when I use my Xbox one, not on my series x. the screen pops up in a few weird places instead of a blank
I’m on a XSX & one of the most bizarre things happened to me not that long ago when I selected a Rivals challenge for a Rally Adventure course while in freeroam on the main Mexico map. After I quit the Rivals challenge & it tried to return me to the main map, I ended up in some bizarre, psychedelic limbo with the environment graphics smeared all over the screen, but the car was perfectly clear. I could rotate around the car & everything outside it moved & smeared while doing so. Felt like I had landed in the Jimi Hendrix Horizon DLC…

I’m not home atm so I dont remember the exact steps but this is a feature in game iirc. You can adjust the settings to get it back to normal
Just got home try going into your settings. Under the accessibility there is a section called moving backgrounds. If it says on then something is definitely bugged. A few people I talked to in the past had this fix this issue. Turn moving backgrounds off and save. Then turn it back on and save again. That should fix where it is just showing the fh5 load up.
