For any race in career mode you can select standard, long or extra long for the race length.
The degree to which it changes varies by track, number of laps for standard, etc.
It can be changed from the Assists menu - at the very bottom.

You can find it under the ‘assists’ menu - as for the length, I usually do the ‘long’ race and usually its around 10-13 laps (the normal is like 3-4 laps)

As a rough guide you are looking at:
2 to 5 laps standard
10 to 20 laps long
30 to 50 laps extra long
Standard around 5 mins
Long around 15 to 20 mins
Extra Long an hour

You can select extra long for every career race that I have seen so far. Race length varies from fifty laps to twenty dependent on distance Or time I guess. The longest event I stumbled into was the Corvette showcase endurance event at Spa. The extra long option gives you a 69 lap race. All your prize money and bonuses are suitably increased too.
To give you an idea:
Driver level 80
Collector level 9
100+ cars owned
CR 6.3 million earned
These are my stats after playing for three days and being approximately halfway through the Evolution Cup.

Thank you all very much for the information.
Since Turn 10 insists on keeping the the twenty year old AI and calling it “drivatars,” I decided not to buy any more Forza products until I could either qualify, or at least make the races longer than the average TV commercial break. I am glad to see that they made this positive step. Although, qualifying is still sorely needed.
This is by far my favorite new feature.
Note that the post above Me mentions GENERAL lap numbers to expect. The NASCAR-themed series does some hiher numbers, for example the Homestead Miamk track will go up to 100 laps on Extra Long, or the Daytona Speedway will be 50 laps. I also got one track (not sure which series) that went up to 80 laps.
Still making my way through the championships, since i am using the Extra Long option.
Same issue here, I can’t figure it out, I’ve changed one time in a the menus just before a race, now I can’t find it anymore, Stucked with extra long lenght.
