The reason is on race tune with race gas, snapping the throttle shut causes a momentary over-richness, particularily in forced induction without diverter valves. The high temps and ignition advance they run cause this still fueled air to ignite when now in oxygen… They in fact do it in real life. An old hotrod trick on standard cars many moons ago was to put a spark plug in the tailpipe to cause it.
So it is more pronounced visually vs real life, but it does happen on high performance applications.
