manual (no clutch)
ABS off for all cars
TCS off for all cars from 787B to Beetle
STM off
driving line completely off
normal steering

I use manual with clutch, abs for braking, normal steering, stm tcs off ,racing lines all off and i use a controller. Thinking of switching abs off as when you learn with abs off you can brake a lot later and harder on the corners.

tcs in higher power cars, automatic (sometimes manual in lower powered vehicles) No clutch. race line. sim steering. I have the thrustmaster Steering wheel. all other assists, off.
