Is there anywhere I can find a list of the cars with manual transmissions? It doesn’t seem to display the car’s transmission type in game.

It doesn’t list the transmission type by car because it is a game setting choice. You can choose to have automatic, manual or manual with clutch and the setting is considered an assist. As far as the game is concerned, what the cars actually come with IRL is irrelevant.

It is relevant in some ways. For example the 2015 Corvette Z06 is a 7-speed manual or 8-Speed automatic in real life. In the game the car is modelled with the 8-speed automatic.
To answer the OP questions unless someone creates a list there isn’t one that I am aware of.
