It has been a few months since I last played. But I noticed just today that the game is only using 2 cores / 2 threads on my I7 4770K and the game runs terrible now… Any ideas?

Disable HT and run the game. See if that fixes it. If not, try lowering CPU intensive graphic options.
My i5 runs on all 6 cores pretty steadily. I only see 100% on two cores when starting the game. During gameplay rarely does one or two get passed 40%. The rest are anywhere from 8% to 20%.
My old i5-3570K uses all 4 cores. I spike to 100% on all 4 cores during loading and maybe a full field rain race…but it runs smooth 99% of the time on my older system.
