Pretty sure there isn’t a listing anywhere but the ovals are defiantly the easiest while Nurburgring, Rio, Dubai, and Virginia being the more complex tracks with lots of sharps turns camber and elevation changes.

FOREBODING RAIN is right. The tracks they listed are quite winding and complex, but that’s not the only factor in track difficulty.
Personal driving style and car tuning also play a factor. I absolutely hate Road America. It’s a pretty simple track, but it’s a power track with a focus on good braking and throttle control; two things that I struggle with. Meanwhile, I can practically do Sonoma Raceway in my sleep, because it’s more of a grip focused track with lots of sweeping curves and few long straights.
I have to agree with the previous post that it varies, nice wide open tracks is a good start though if you’re looking to test the water! Start with club circuits then work on your line on the full/gp circuits when you feel ready.
Keep in mind that while some tracks may be easier to simply get around, all that means is that the margins between a fast time and a slow time narrows. Look at the top times in any class around The Daytona oval and I’d wager that the top 10 are all within hundredths of a second of each other, while you may see multiple whole seconds between the top time and the #2 time at the Norschleife.
