Does any one have a list of what cars you win from the showcases, and are they just available in career mode

All cars are available outside of career mode via the rental system, in both Multiplayer and Free Play.

Can’t you buy them on the auction house too?

Original purchasers of the Ultimate Edition complained that VIP status did not give permanent 2X CR and were given some of the cars as an appeasement. It’s possible that some of the cars may be available by other means.
