How do you select difficulty level in co-op races?

I am trying to earn the green man suit by winning the trial co-op race on unbeatable, but I never get a screen to select my difficulty for the race. I was beating S2 cars in an S1 car so I don’t think it was on unbeatable, even though my game setting was set to unbeatable.

I think it tied to your difficult level you play at, simply raise it in the options before activeing the race
