I have completed these challenges but only 1 has unlocked and it has been over 24hrs on some of these, more like 3 - 4 days, just wondering if this is normal or if something is wrong
What specific Forzathons are not updating for you?

it was the latest ones for May
Sounds like you havent done them right
Check you are on the correct layout of the track
And using the correct cars
And complete the race in full
They should pop straight away and receive the reward at the after race rewards screens
Also to make sure no other issues..don’t use super easy assists or have friction assist on
now 3 of the 4 has unlocked, must have just taken some time
lol obviously cos those are the only ones available to do.
