Just purchased the Ultimate Edition which is slowly downloading as I write this question. Do all the extras with said edition come via the download in which case how do I locate the cars etc or do I need to add a code?

If you bought it directly on the console everything should be included.
Once you get far enough into single player you will have access to the autoshow and garage. Once there you should have access to all your stuff.
The dlc cars will be in the autoshow, dlc tab and should be free.
Everything should become clear once you have the game downloaded. And hope you enjoy the game as much as I do.
I bought the Ultimate Edition on PC as a download through the Microsoft Store, and everything came with it automatically (car packs, VIP, etc.). So you should be good to go.
I bought a physical copy of UE and it contained codes for all the necessary downloads. So either way you should be set.
