I have noticed that I take screenshots and the alert comes up as its saved but then I check the next day on xboxdvr and nothing from FM7 is evident
hmm so it seems i have the same issue. Once upon a time i had hundreds of files on xbox live and it stopped sharing anything from any games to a certain point. i cleared all my old uploads and now only a few recent halo 5 clips are there and some older but much loved gta ones but all my fm 7 stuff is quite absent
Quickest, easiest and most reliable ways to download video clips and screenshots from Forza are:
(1) XBox app for Windows 10
(2) Forza Hub app for Windows 10

It looks like this game can’t be tracked by the Game DVR content crawler sites like most others, so you’ll have to use the Windows 10 apps like Wildcat mentioned. iOS apps work too.
I’ve been pulling screenshots from the Xbox App with no real issues. They’ll go into a Captures folder on your competer’s Video directory.
