Yes sir…I’ve been around since the beginning of the franchise, watched quite a few of the PTG podcast throughout years as well. Interesting enough is I believe we both are in the same real life profession as well. :plate_with_cutlery::fried_egg::cook:

My current job is only half cheffing, lol
Mobile event catering (weddings) means a whole lot of packing, lifting, unpacking, set up, take down, but other than a mass of prep, not that much cooking :joy:

Yes…I’ve been in the industry for 33 years now currently working for a private dinner club. A bulk of my career (20 years) was spent at a BIG 10 College as a lead residential sous chef and special events (catering) during summer sessions.

My family were owners and operators for 61 years under the same roof up until last year in 2022 and finally their retirement. I left the nest when I graduated at 18 many moons ago and hit the scene as a young and eager cook skipping culinary school at that time by earning my bones gaining as much experience building my resume in Italian, Chinese, Greek, Mexican, Traditional American Cuisine. After my first 8 years of grinding that’s when the opportunity opened at the college and hence the long stay and earning my culinary degree. Since then I relocated to the east coast from the midwest where I met my future wife and as they say the rest is history.

I remember watching a few of the PTG podcast and you sharing how your mornings went cooking brunch for 50 or so covers plus the daily routine getting prep etc. Good stuff!

I could talk food and restaurant stories all day long as it could probably write a book. I will say one thing….the current state of the industry is getting harder by the day with food prices and finding qualified and eager individuals that want to work and learn. Just in the U.S. alone we are short about 900,000 workers in the industry as patrons are finally getting comfortable about coming back. I can imagine what that number is worldwide. So much so that’s why so many establishments are and have been closing in record numbers that it’s beyond alarming. I’m a huge believer of substainablity and buying local even in my own home to this day. It just makes sense.

The state of the industry is the same over here. Hard to attract new people to work in rubbish conditions.

College trained myself, then went straight into a nice hotel. The politics there were horrendous though.

I got myself out of the restaurant, into a much more casual place now, but having a real impact on menu decisions and being a part of peoples special day, is a good part of the job.

I do Scottish barbecue for weddings and events.

Scottish Barbecue! That’s excellent you found yourself a more enjoyable and engaging environment vs the previous. It’s always tough to leave a job if there is an attachment being your coworkers, the food, customers….etc. It’s not that difficult to leave if the politics, drama, bad leadership, dwindling sales, high food cost issues, horrible coworkers behind. Sometimes change is good to make your own well-being comfortable.

I’ve always said why stick with a establishment that if you feel your not being valued and at the end of a day or long nights that you’ve made contribution for the customers. That’s the main reason why we do this. To give the guests the best possible experience from the first step in the door to the last.

Good for you my friend! I’m happy your still grinding not only in a newer venture, but also in the paint booth. It’s always a treat when your new releases come out even after all these years. Stay strong! :+1::sunglasses::muscle:

Hey buddy,

I have been experiencing this and it was driving me NUTS!

If you have a car that you have done the paint on and saved & shared then anytime you change that paint/design it will unshare it. Pretty stupid system if you ask me!

What I now do is complete the paint and save & share. Then I will save AGAIN as a different file and that is the design I will use on my car. So if I ever change it then it wont unshare and be lost into the abyss.
