Your most likely activating the mouse some how, either by knocking your desks; or the touch pad on a laptop been over sensitive. Both those things will cause Forza Motorsport 7 to swap from controller/wheel, over to keyboard/mouse controls.
That was not the case during my tests, but I can see where others may have experienced that issue.
