Browse to:
%APPDATA%/local/Packages/Microsoft.ApolloBaseGame_*/SystemAppData/wgs/
In here will be 2 folders, t and one beginning with 000.
000 folder contains all the encrypted save files and the index file. You can copy this folder elsewhere as required to manually backup.
You can restore these files and the game will load as per the files at the point in time they were copied.

The path is wrong.
%appdata% is supposed to point to %userprofile%\AppData\Roaming
%localappdata% is supposed to point to %userprofile%\AppData\Local
This means using %appdata%\Local\Packages will not get you to the correct location.
It should be %localappdata%\Packages
So
%localappdata%\Packages\Microsoft.ApolloBaseGame_*\SystemAppData\wgs
I don’t know about the rest because I have 3 folders there that start with 000.

Full path to it, the “random” chars are not bound to your personal key or change per user (last one is an assumption though), google “Microsoft.ApolloBaseGame_8wekyb3d8bbwe” and it shows its just the path for FM7
