Opel Kadett E indeed would be interesting addition to Forza Horizon 5. Probably most wanted model is the Kadett E GSi, but if it should be other model, how about 1988 Kadett E sedan, perhaps Club trim level like this edited modelcar shot below (old 1/43 Gama modelcar).
