You should be able to put an LS in every car just like real life.
I’ve independently made my own giant spreadsheet of engines, cosmetic options & car masteries. Will go through this thread later and try and fill in any missing info.
The Koenigsegg Regera has no swaps of any kind.
OK, here’s a giant data dump. I own every car that can be searched for on the AH with the exception of 4 preorder cars (nissan GTR, Merc GTR, Ford Focus, Porsche 911), the Capri FE and the Chevy Bel Air HS, and have put each car I own into my own spreadsheet.
I’ve included FE editions because they frequently don’t have the same engine swaps as the non-FE version. e.g. the normal Transit & Zonda have an engine the FE versions don’t, the VW Kombi FE has an engine the normal Kombi doesn’t.

7.0L V8/7.0L V8 H - these are a bit messed up. There are 4 different engines. All are naturally aspirated, all have options of twin turbo & PDS. The V8-H is stock in the Dodge Challenger, has 317KW/664 N-m, which is 425/490 for the metrically challenged. That’s available for the AMC Gremlin and the Chrysler VH. Then there are 3 different engines all labelled as 7.0L V8. One has 377 KW/653 N-m, or 505/481. That one is available in the Cadillac Limo, the Chevy Nova Supersport FE and the Vauxhall Monaro. One has 317 KW/665 N-m, also 425/490, but it’s a slightly different displacement to the one from the Challenger, different cost and very different numbers when upgraded. That one is stock in the 1969 Dodge Charger and only available as an upgrade in the Hoonigan Bel Air. And one has 362 KW/664 N-m, 485/475, only available in the XA Falcon FE. The 1969 Dodge Charger has a 7.0L as stock, but doesn’t have any of the others as upgrade options.
3.0L V8 racing - 2018 BMW I8 roadster (car pass), 2009 Lotus 2-Eleven, 2005 Lotus Elise 111S
4.0L F6 - There are 2 different engines here, too. Both have starting numbers of 493/339, but one costs 30k and one costs 34k, and they upgrade quite differently. Everything on your list currently is correct, with one exception. The Hoonigan Rauh-Welt Porsche has both options available as upgrades, and the Porsche Macan only has the 30k version, it doesn’t have the 34k version that all the others do. Missing from the 34k list are the 1985 Porsche #185 959 prodrive rally raid (car pass), 1959 Porsche 356 A 1600 Super (car pass), 2004 Subaru Impreza WRX STI, 1963 VW type 2 FE.

8.4L V10 - 2017 Chevrolet Camaro ZL1 preorder (normal version doesn’t have it, PO version does), 1979 Chevrolet Camaro Z28, 2010 Ford Crown Victoria Police Interceptor, 1993 Ford SVT Cobra R, 1973 Ford XB Falcon, 1964 Ford GT40 MK 1, 2006 Hummer H1 Alpha, 1973 Pontiac Trans am SD-455, 1965 Shelby Cobra Daytona Coupe
Incorrectly on list - 2008 Dodge Viper has a similar but slightly different 8.4L engine as stock, does not have this engine as an upgrade.
6.0L V12 - 2009 Ferrari 458 Italia, 1995 Ferrari F50, 1987 Ferrari F40
2.6L 4 rotor racing - 1992 Nissan Silvia club K’s

6.2L V8 DSC - incorrectly on list - the jeep trailcat doesn’t have this engine as an upgrade, but it has a similar engine as stock.
racing V12 - 2016 Aston Martin Vulcan, 2017 Chevrolet Camaro ZL1 preorder (normal version doesn’t have it, PO version does), 2009 Ferrari 458 Italia, 2002 Ferrari Enzo, 1995 Ferrari F50, 1989 Ferrari F40 competizione, 2012 Lamborghini Aventador FE, 2011 Lamborghini Sesto Elemento, 2008 Lamborghini Reventon FE, 2004 Maserati MC12 FE, 2018 McLaren 720S coupe preorder (normal version doesn’t have, PO does), 1998 Mercedes-Benz AMG CLK GTR, 2010 Pagani Zonda R, 1971 Porsche #23 917/20
minor typo issue - the f50gt is on the list, but should have (stock) after the name
Racing 7.2L V8 - 2554 AMG M12S Warthog, 2012 Bowler EXR S, 2017 Chevrolet Colorado ZR2, 1988 Chevrolet Monte Carlo Super Sport, 2017 Ford F-150 Raptor, 2014 Ford Ranger T6 Rally Raid, 2011 Ford F-150 SVT Raptor, 2006 Hummer H1 Alpha
minor typo - RJ anderson truck should say (stock)

The sheer number of classic and contemporary cars that can swap in the 415hp/415ft-lb 6.2L V8 sets up an interesting scenario where you can plug in the same exact engine into vastly different cars and see how they handle the thing.
I’ve taken to using what I’ve called The Devil’s Heart: “…seventeen pounds of boost through an LS3 bored-out to seven liters, plumbed and chipped to burn 100 octane with sodium-filled valves and an uprated oil cooler to handle the increased thermal load…” In game terms that is the 6.2L V8 swap with Race Fuel, Race Block, Street Valves, Street Oil Cooling, and a Sport turbo or PD supercharger. I’ve been cramming one into every car that has the option and judging them by what happens next.
The turbo version is slightly lighter, but the lag may get in the way when exploiting that flat torque curve.
This morning, I took a look at the 1974 Honda Civic RS (car pass), and wrote down the engines.

What is the source of the 4.0TT V8 engine swap for the Maserati Levante? It has 660hp according to the stats
488 GTB!
I’m pretty sure that I saw this 1.6L VVT as a swap option for the '84 Honda Mugen CRX. It needs to be added to the list.
