Am I missing it somewhere or does it not exist as an option?
I’ve looked everywhere, ( I think)
Some races do rolling start and some are standing… The very first set of races for me we’re all rolling. After that the next set was static.
I’ve seen no option for this yet.

I just passed the seeker cup and did 2 more starts and both were fixed. Also went to the breakout cup and started one race and it was rolling start.
So maybe they’re rolling until that cup is passed? Should have played some more before jumping the gun and posting being bummed.
