After Forza 4 and Horizon 1 car list are hard to disappointment ! 
Not sure if this link is anything to go by, but it has confirmation of a 1974 Holden Sandman, as well as a 51-53 Holden FX ute.

Can anyone identify the green car in front-ish of the Mustang? There’s also a blue car in front of the Falcon; you can only see a bit of it. Can’t tell what that is either.

Unless you mean the one mostly obscured by the splash, I’m not sure what it could be.
Blue one, Part of me is thinking an early Plymouth Barracuda.

The blue car looks like the Holden HQ Monaro from FM6.
The Monaro in FM6 doesn’t have a left side wing mirror.

At this point, I’m thinking the green is the Torana, not the Falcon. Compare:
The fender flares match up even.
Blue? I’m kind of getting a C2 Corvette impression. If nothing else, the side mirror matches.
I could be wrong but that could be a Torana. And is it just me or does the car in front of the 1973 Falcon look like a1970 Chevy SS396 Nova.

You could be right there. It’s hard to go by, but it almost has similar body shaping as the XY

In the little montage they show you after the willys/heli race on the E3 demo i saw a 22b and an EVO 6, Just right after the “Hire and fire your friends” clip.

I think nobody mentioned the '77 Ford Escort mk2 that appears in a menu next to a Torana. Yo can see it at 1:32 of this video.
