I changed my gamertag to A11eyesONME23 will it change to that on my post . Will the things sent to my old tag get sent to new one?

On your posts? Yes, it already has changed them.

For gifts etc I would assume so, except for any you have manually requested (like in RVM etc).

I would assume that everything regarding your gamertag will resume the same as it is all attached to your profile, not your name. Shouldn’t see why it would effect anything as the system probably doesn’t go through using names, it probably gives everyone some sort of ID number and your name is just a changeable option like the bio, motto, etc.
