I have unlocked a few motors and even bought myself a Quattro and would live to race them online with my crew/club mates but I’m forced to drive a Viper.
So how do I drive my cars?

No I’m on Xbox One.
What class are your cars? Because online road trips have restrictions. If you are being forced into a car you do not own, it is most likely because your cars are not in that class.
I understand the question a bit better now. Yes - if the game is forcing you to rent a car you do not own a car that meets the restrictions imposed on that particular road trip. You must be in the same CHAMPIONSHIP class at least, I am unsure about the actual PI Class but that may also be restricted. Once you buy a couple more cars, you will find this happening less and less.
If there is a PI restriction, it will give you a chance to LOAD SETUP so that you can change it if you have multiple class setups for one vehicle.
