Simply put: While it’s been made abundantly clear that people want spectator mode for multiplayer, I believe it would also be really fun to have it in single player too for Free Play!
To further explain, I think it would be great fun to set up an intense (or silly) race and watch it happen live from replay cameras without needing to do the race yourself & meddle with the outcome. I could only image how fun it could be to bring friends over and bet on specific cars racing, and then watch at the edge of your seat as the cars battle it out!
This feature would be made especially useful if you also allowed players to select exactly what cars the AI opponents drove so that you & your friends could truly create any race you want, and watch it unfold life in all of its nail biting glory! Perhaps settling some long time “which car is better” debates in the process. 
I have been so desperate to do this, that I’ve found a tedious workaround in Forza MotorSport 7. If I set up a split screen race with 2 cars of my choice, separately race both of them to the finish line & then simultaneously have them cross the finish line, the AI will take the cars over & I can sit back & watch the duel behind the race results screen…Desperate times call for desperate measures.
Best way to do it now is to set up a race & then turn all of the auto-assists on. However this lacks the ability to move between various cars or to view it using the replay cameras.
Watching 24 AI drivers racing is so much fun! Sit back, grab some 
and enjoy!

I 100% agree! I’d set up some outlandish races & bet on them with friends!
I think Spectating should be re-added also to online races too
