At mugello my GT3s lose so much grip on the kerbs that I have to avoid them to stay on the track. Any advice? Is it my set up or are the kerbs poorly made? This doesn’t happen on other tracks
Mugello curbs are very unforgiving. Some can be completely eaten, some should be outright avoided, and many should be taken, but only with your inside wheel, because hitting them with both wheels will throw your nose wide.
Stiffer spring and higher bump setups do not play as well here relative to other circuits because of these unforgiving curbs imo.

I don’t think you should stick to this “100%” from a pure pace perspective (he avoids a few instances where you can safely take more track, which might be down to preference or his typical setup styles), but he will directly address your questions about curbs, specifically for GT too. And if you follow his points you’ll have consistent and safe pace, good for actual racing.
Examples of key points:

braking zone at ~3:45. Always avoid the curbs on the right. Like don’t even touch them when braking

chicane at ~7:55. You want to clip it, but never with both wheels or you will push wide and screw up your exit setup for the switchback

Probably how much of the curbs you are going over or how you are attacking the curbs on the inside of the turns. I barely touch the curbs on Mugello, but that is from years of playing Forza Motorsport titles, where a curb would be deadly. As long as I am being smooth, then putting 2 on the curbs isn’t problematic for me.
