I’d love to see a healthy selection of hot hatches - both modern and classic. Granted the (admittedly boring) box design of most hatchbacks isn’t going to stir the soul when parked along the coastline, but up on the alpine roads where the going is twisty and narrow, nothing beats a proper hot hatch!
Alongside that I wouldn’t mind an increased selection of open-top cars. My first experience of the original Horizon was taking a BMW Z4 up the Red Rock pass just as the sun was beginning to set. That was the moment that hooked me on playing Horizon.
I could sit here and list every car I’ve ever wanted ever, but I’m sure PG already have the key cars nailed, so I’ll stick to the main wants;

Considering the game is set in Southern France and Northern Italy, I feel that above anything else I would love to see some (old and new) European hot hatches included. All of those which appear in Forza Motorsport 5, but as well as those I feel like the following would make for some spectacular runs along mountain passes (small, quick and agile cars = heaps of fun!):
RenaultSport Clio’s of some form. I understand the Williams is going to be included in FM5 at some point, but I’d also like to see a modern Clio RS (197 or 200). The 197 is my favourite car of all time.
Clio 172/182 would also make me smile a tremendous amount
Peugeot 106 GTI
Citroen Saxo VTR
Include those and a select few others will equal hours of huge grins.
I’d also like to see the Sierra RS500 Cosworth and '92 MK5 Escort Cosworth return, aswell as the Lotus Carlton, Peugeot 205 T16, Renault 5 Turbo and BMW E34 M5.
